Dr Esther van Asselt
Senior scientist at Wageningen Food Safety Research
Esther van Asselt has been working at Wageningen Food Safety Research (WFSR) for 19 years as a senior scientist on the topic of food safety. She is the project leader of multiple national and international projects focusing on (upcoming) food safety hazards in the food supply chain. Topics addressed are related to transitions in the food supply chain, such as circularity, biodiversity and the protein transition. Within GiantLeaps, she is work package leader of WP7, in which the human diet is optimised using alternative proteins such that it maximises the nutritional values of the diet while minimising the impact on the environment and human health.
