Prof. André Brodkorb is a Principal Research Officer in the Teagasc Food Research Centre, Moorepark and an adjunct professor at University College Cork, Ireland. His research interest covers the structure/function relationship of food and food ingredients, in particular proteins from sustainable alternative or plant-based sources. The structural changes in food are monitored from “from source to delivery” i.e. raw food and processing including disruptive technologies, food production and storage all the way to consumption and gastro-intestinal transit in vitro and in vivo. He has been a PI or work package leaders on several large national and EU projects on sustainable food production such as Uprotein and Giant Leaps. He has been leading several large applied industry-focussed projects, leading to licence agreements and one spin-out company. Andre Brodkorb is the lead author of the international consensus INFOGEST in vitro digestion method for food. 1,2 He is also the administrator of the INFOHEST LinkedIn group and host of the YouTube channel @fooddigestion with over 60 digestion-related videos and webinars by international expert and recently graduated PhD students
